Don’t be fooled by the name of this Breakfast Quiche recipe…it’s absolutely delicious at any time of day! Serve it warm for dinner with a crispy side salad, or pop it in your lunch box to enjoy at work (or at a picnic!) over the next couple of days.

While we’ve thrown in mushrooms and tomatoes, there’s nothing to stop you mixing things up with different ingredients. You could always add onion, peppers, spinach or other veggies – just be sure to adjust the calories, if you’re keeping track.

To make things creamier without ramping up the calories, we’ve stirred in a couple of tablespoons of quark. If you’re not a fan of quark (or you’re cooking for dairy-free diets), you can leave it out – it’ll be just as tasty!

How many calories are in this Breakfast Quiche?

Spray a frying pan with low-calorie cooking spray and set on a medium heat. Lightly fry the mushrooms for 4-5 minutes until brown around the edges.

Arrange the sausage slices into the bottom of a silicone cake mould. Place the bacon on top, followed by the mushrooms and sliced tomatoes.

Add the eggs and quark to a bowl or jug and season to taste with salt and pepper. Whisk until smooth. Pour the egg mixture over the sausages, bacon and vegetables and sprinkle chopped parsley on top.

Cook for 25-30 minutes, or until the quiche is set and golden in colour.

How do you know when Breakfast Quiche is cooked?

You’ll need to cook your Breakfast Quiche until it’s set and golden in colour. This will take around 25-30 minutes.

How do I reheat Breakfast Quiche?

This dish is just as delicious served hot or cold!

To reheat from chilled, place in a microwave-proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

To reheat from frozen, allow to defrost thoroughly first. Heat covered in the microwave for 3-5 minutes. Stir, then cook for a further 5-7 minutes until piping hot.

  • low-calorie cooking spray
  • 6-8 mushrooms sliced
  • 2  reduced-fat sausages cooked and sliced
  • 5 bacon medallions cooked and sliced
  • 3 tomatoes sliced
  • 8 medium eggs
  • 2 tbsp quark
  • salt and pepper to taste
  • 1 tbsp fresh parsley finely chopped

    Hi Marina, the quark adds a little creaminess but you can leave it out if you prefer and the quiche will still taste great. Alternatively, you could use another creamy soft cheese such as cottage cheese (blitz it first to make it smooth), plain fromage frais or you could use plain fat free Greek yoghurt. Hope this helps.

      Hey Emily, we work out our recipes on the serving size not by weight. To work out your own weight of a serving you would need to make the finished dish and divide servings, as the weight will vary due to variation of ingredients and water content it’s not something we can do as an exact measure. If you scroll down to the recipe card at the bottom of the page on the website there is a little arrow by servings and you can alter up or down to serve more or less people. Hope that helps!

    Hi Amanda, yes you can use a ceramic quiche dish you may need to spray it with a little low calorie cooking spray to stop it sticking but it will still work great!

    Hi Karen, it could be that your oven is cooler than ours we use fan assisted ovens for all of our recipes. You could try increasing the temperature slightly and continue to cook until the quiche is set and golden in colour. Hope that helps!

    Hi Lynn, I’m sorry you’ve had trouble with the Breakfast Quiches. You could try cooking the mushrooms first to remove some of the moisture or cook the quiche for slightly longer. Hope that helps!
