If you’ve never heard of overnight oats, then you’re in for a treat! This nourishing breakfast recipe is a way of enjoying porridge oats without needing to cook them. Ideal if you don’t have too much time in the mornings!

Overnight oats are typically layered fruit, oats, and yoghurt – but these Apple and Blackcurrant Overnight Oats are a bit different. We’ve mixed up the oats, fruit, and yoghurt, and topped our mixture with a “custard” layer made up of natural yoghurt, vanilla extract, quark, and some chia seeds.

The result is a slimming-friendly, grab-and-go sweet treat that sets you up for the rest of your day!

Chia Seeds – You can get chia seeds from most local supermarkets or on Amazon.

We use Sukrin 1, which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over on Amazon UK.

That being said, you don’t have to use Sukrin – there are lots of other high-quality granulated sweeteners available from the supermarket such as Canderel Sugarly, and Natvia.

In a clean bowl, mix together the “custard” ingredients – yoghurt, quark, vanilla extract, chia seeds, and granulated sweetener. Beat it well to remove any lumps.

Pour this mixture over the blackcurrants, adding the saved blackcurrants on top, then close the lid of your jar, and refrigerate overnight.

Ingredients

For the Oat Layer

  • 37 g porridge oats
  • 100 g fat free natural yoghurt
  • 1 apple peeled and grated
  • 1 handful blackcurrants
  • 1 tsp granulated sweetener
  • ¼ tsp vanilla extract

For the Custard Layer

  • 80 g fat free natural yoghurt
  • 50 g quark
  • 1 tsp vanilla extract
  • ½ tsp chia seeds
  • 1 tsp granulated sweetener

Instructions

Never used quark before, didn’t like the sound of it but thought I would give it a go. OMG these oats are amazing trying the tiramsu one tomorrow. Also used topping to put on sugar free jelly 😃

    Hey Teresa, you could swap the quark for extra yoghurt or for some light cream cheese and adjust the calories accordingly, hope that helps!

Does anybody know where I can buy Blackcurrants or if anything else would do instead. I can’t seem to find them in Tesco, Morrisons or Asda

The method says to use vanilla in both the oats mixture and the topping but vanilla is only mentioned once in the ingredients?
