Spicy Sausage Pasta

Ingredients

  • 300 g dried pasta
  • 4 reduced fat sausages
  • 1 tsp dried chilli flakes
  • 2 garlic cloves peeled and crushed
  • 500 g passata
  • 1 tsp dried oregano
  • 1 tbsp fresh basil finely chopped
  • 100 g green beans
  • salt and pepper to taste
  • low calorie cooking spray

Instructions

  1. Spray a frying pan with low-calorie cooking spray and set on a medium heat. Cook the sausages for around 15 minutes, until cooked through and browned. Meanwhile, cook the pasta according to the instructions on the packet.

  2. Cut the cooked sausages into 2cm pieces. Spray a saucepan with low-calorie cooking spray and set on a medium heat. Add the sliced sausage, chilli flakes and garlic and cook for 1 minute. Pour in the passata, oregano and half of the fresh basil. Cut the green beans into 2cm pieces and add to the pasta 2 minutes before the end of cooking.

  3. Drain the pasta and beans and add to the saucepan with the tomato and sausages. Season to taste with salt and pepper and mix well.

  4. Serve immediately, topped with the rest of the fresh basil and a little Parmesan if you fancy!
