Spicy Crispy Chicken Stack

Ingredients

  • 40 g panko breadcrumbs
  • 1 tsp celery salt
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 1 tsp paprika
  • 1 tsp ground black pepper
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • 1 tbsp jerk seasoning
  • 1 medium egg
  • 2 large chicken breasts
  • low calorie cooking spray
  • 4 ciabatta rolls, approx. 50g each sliced in half
  • 2 tbsp jerk BBQ sauce
  • 100 g lettuce sliced
  • 1 tomato sliced

Instructions

  1. Preheat the oven to 180°C. Line a baking tray with non-stick baking paper.

  2. Add the panko breadcrumbs, celery salt, onion granules , garlic granules, paprika, black pepper, chilli powder, turmeric and jerk seasoning into a bowl and mix well. In another bowl, beat the egg.

  3. Slice the chicken breasts horizontally. Dip each chicken piece first into the egg then into the breadcrumbs placing onto the lined baking tray.

  4. Spray each with low calorie cooking spray and place the tray into the oven for 20-25 minutes until golden brown and the chicken is cooked through with no sign of pinkness.

  5. Spread a little of the jerk sauce onto the ciabatta rolls, top with the lettuce, tomato and cooked chicken!
