Preheat the oven to 200°C fan and line a large baking tray with a sheet of non-stick baking paper.
Put the parsnips, curry powder, garlic powder and honey in a large mixing bowl and season well with salt and freshly ground black pepper, to taste. Toss to coat the parsnips evenly.
Spread the parsnip fries in a single layer on the lined baking tray and spray with low-calorie cooking spray. Place in the oven and bake for 20 minutes, then turn over and spray again with low-calorie cooking spray. Cook for a further 20 minutes or until golden, crisp around the edges and soft inside. Serve.
