Salsa Salad

Ingredients

  • 200 g cherry tomatoes quartered
  • ½ medium red pepper deseeded and finely diced
  • ½ medium green pepper deseeded and finely diced
  • ½ small red onion peeled and finely diced
  • ½ medium avocado stone removed and diced
  • small red chilli deseeded and finely chopped
  • ¼ tsp garlic granules
  • juice of 1 lime
  • 2 sprays of light olive oil spray
  • 10 g fresh coriander stalks removed and roughly chopped
  • salt and black pepper

Instructions

  1. Place the tomatoes, peppers, onion, avocado and chilli in a medium bowl.

  2. Add the garlic granules, lime juice, olive oil spray and coriander. Toss gently to coat the salad. Season to taste with salt and black pepper.

  3. Place in a serving bowl and serve with Chicken Fajitas or other dishes of your choice.
