Pea, Pickle and Bacon Potato Salad

Ingredients

  • 750 g new potatoes cut any larger ones in half
  • 300 g frozen peas defrosted
  • 4 bacon medallions cooked and diced
  • 3 spring onions sliced
  • 70 g gherkins diced
  • 50 g pickled onions diced
  • 1 medium red pepper deseeded and diced
  • 3 tbsp pickling juice from the jar of gherkins or pickled onions
  • 8 g fresh mint finely sliced
  • salt and freshly ground black pepper, to taste

Instructions

  1. Place the potatoes into a pan of cold salted water. Bring to the boil then lower the heat and simmer for 15 minutes until tender. Add the peas for a couple of minutes before the end of cooking the potatoes and drain well.

  2. Add the potatoes, peas, bacon, spring onion, gherkins, pickled onion and pepper to a large bowl.

  3. Add the pickling juice, mint and season to taste with salt and pepper. Toss to coat and serve.
