Ingredients

  • 1 gammon joint, (all fat removed)
  • 1 celery stick, chopped
  • 2 onions, chopped
  • 3 bell peppers, diced
  • 2 large carrots, chopped
  • 8 button mushrooms, halved
  • 415 g tin of baked beans
  • 400 g tin of kidney beans
  • 400 g tin chopped tomatoes

Instructions

In the oven

  1. Add all of the ingredients to a casserole dish, reserving half of the peppers to use later. Sprinkle in the contents of this sachet, stir well and cover with a tight-fitting lid. Place in an oven to cook.

  2. We suggest cooking for 2-3 hours at 170-180°C, checking and stirring every 30 minutes until cooked thoroughly.

  3. Once the gammon is falling apart and the sauce has thickened, add the reserved peppers into the dish and cook until soft.

  4. Enjoy! We also recommend serving alongside steamed veg, rice or pasta.

In the slow cooker

  1. Add all of the ingredients to the slow cooker pot, reserving half of the peppers to use later. Sprinkle in the contents of this sachet, stir well and cover with the lid.

  2. Cook on high 6-8 hours on high (you can leave it on longer)

  3. 30 minutes before the end of cooking stir in the reserved peppers.

  4. Enjoy! We also recommend serving alongside steamed veg, rice or pasta.
