Easy Chicken Curry

Ingredients

  • 12 skinless and boneless chicken thighs
  • 1 onion, peeled and sliced
  • 2 garlic cloves, peeled and finely sliced
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 4 tbsp medium curry powder
  • 1 chicken stock cube
  • 500 ml water

Instructions

  1. Spray a frying pan with low-calorie cooking spray, and set on a medium heat. Add the chicken thighs, then fry until browned on all sides.

  2. Add the onion, garlic, and spices, and mix well to coat. Add the stock cube to the water, then pour into the pan and stir.

  3. Set the pan on a medium heat. Bring to the boil, then lower the heat. Cover with a lid and simmer, stirring occasionally, for one hour.

  4. Remove the lid and simmer for a further 30 minutes to reduce and thicken the sauce. Then serve with your choice of accompaniment
