Chilli and Mint Peas

Ingredients

  • 200 g frozen peas defrosted
  • 1 red chilli deseeded and finely diced
  • 2 garlic cloves peeled and crushed
  • 5 g fresh mint leaves finely chopped
  • 1 tsp reduced-fat spread
  • salt and pepper to taste
  • low-calorie cooking spray

Instructions

  1. Spray a frying pan with low-calorie cooking spray and set on a medium heat.

  2. Fry the chilli and garlic for 2 minutes.

  3. Add the defrosted peas and fry for another few minutes, until heated through.

  4. Remove the pan from the heat. Add the reduced-fat spread and fresh mint, and stir to coat until the spread has melted. Season with salt and pepper and serve.
