Cajun-Style Chicken Thighs

Ingredients

  • 8 large, skinless, boneless chicken thighs, approx. 130g per thigh
  • 1 tbsp Cajun seasoning
  • 1 tbsp 0% fat Greek yoghurt
  • 1 tbsp tomato puree

To serve

  • 1 lemon, juiced

Instructions

  1. Put all the ingredients into a non-reactive bowl and mix well. Cover the bowl and place in the fridge for up to 24 hours to marinate.

  2. Preheat the oven to 200°C. Place the chicken thighs onto a baking tray and cook for 20-30 minutes. There should be no signs of pinkness and juices should run clear.

  3. Drizzle with the lemon juice and serve!
