In a bowl combine the carrot, sprouts and spring onion. Add the lime juice, rice vinegar, sweetener and season with salt and pepper. Leave to one side.
Toast the bread until lightly golden. In a small bowl combine the mayonnaise and sriracha.
Spread the mayonnaise onto 2 slices of bread and cranberry sauce onto the other two slices of bread.
Starting with mayonnaise side up add the lettuce, the turkey, pigs in blankets and finish with the slaw. Top with the other slice of bread cranberry sauce side down.
