Put the parsnips, curry powder, garlic powder and honey in a large mixing bowl and season well with salt and freshly ground black pepper, to taste. Toss to coat the parsnips evenly.
Preheat the air fryer to 190°C for 2-3 minutes. Put the parsnips in the air fryer and spray with low-calorie cooking spray. Cook for 15 minutes then turn the fries and spray again with low-calorie cooking spray. Cook for a further 10 minutes or until golden, crisp around the edges and soft inside. Serve.
