It’s no secret that we love a good quiche recipe! To keep things slimming-friendly, we’ve made this one crustless – but trust us, skipping the pastry doesn’t mean compromising on flavour.

With a short, simple ingredients list, it takes next to no effort to make. Leftovers will keep nicely in the fridge for a couple of days, so light lunches for the week are covered. We love a slice served with a fresh, crispy mixed salad.

If you’re not a fan of smoked salmon, try swapping it for asparagus or using poached salmon instead. Top tip: add a spoonful of quark to the egg mixture. You’ll barely taste it, but it makes the filling so much creamier – without any of the indulgence!

Prevent sticking use fry light spray
Spray a little fry light olive oil on quiche dish before pouring in mixture to prevent sticking . Other than that just follow the recipe for a lovely light lunch .
Smoked Salmon and Broccoli Quiche
I added more Quark than the recipe says as the remainder of the tub never gets used. I use almost the full tub of Quark.
So quick and easy to make and so low in calories!
If you don't have any salmon, try chicken and bacon!

Ingredients

  • 8 large eggs
  • 1 medium head of broccoli approx. 375g, cut into bite-sized florets
  • 100 g smoked salmon chopped into small pieces
  • 2 spring onions sliced
  • 80 g quark
  • salt and pepper to taste
  • low-calorie cooking spray
