Slow Cooker Winter Vegetable Gratin
There's no such thing as a boring side of veg with this slimming-friendly gratin! Once your veggies are chopped and in the pot, you can leave them to simmer in our garlicky, thyme and bay leaf stock while you crack on with your main. We've doubled up on cheesy goodness by stirring cream cheese into the slow-cooked filling, and topping everything off with a golden layer of cheesy breadcrumbs. Serve up a gloriously crunchy-topped portion with our Whole Garlic Chicken (see page 108) for the makings of a banging roast dinner.
