Slow Cooker Vegetarian Zuppa Toscana
There are lots of variations of Zuppa Toscana ('Tuscan Soup') out there. While you might think we're taking our inspiration from Italy, we actually tried the one that sparked the idea for this recipe in an American restaurant. To make our version light and veggie-friendly, our ingredients list is packed with plenty of chopped vegetables, hearty potatoes and store-cupboard staples. The cannellini beans and spinach bring protein, fibre and an irresistible creamy texture, while the tangy cheese serves the savoury hit you'd normally get from Italian sausage or bacon.
