There's absolutely no prep needed for these stuffed spuds. After a quick wash and dry, you can pop them in your slow cooker, set it and forget it. When time's almost up, that's your window to throw the ingredients for our easy filling in a pan. We've gone for a zesty mix of sun-dried tomatoes, pesto and chickpeas, but there's nothing to stop you mixing things up with your own go-to flavours. Whatever you do, don't skip giving the potatoes some time in the slow cooker once they're filled – that's when the mozzarella topping gets nice and gooey!

The stuffed sweet potatoes might e a snug fit wen returning to the slow cooker for the final 20 minutes. If you don't feel confident fitting them back in without ruining their shape, you can place the potatoes on a baking tray and pop under a hot grill for a few minutes until the cheese is melted.
