Slow Cooker Red Pesto Salmon Pasta

This dish adds something really special to your midweek menu without any faff at all! You don't even need to pre-cook the pasta: just chuck all your sauce ingredients straight into the pot and pop the pasta in with the salmon on top. You'll leave your slow cooker to do its thing until the fillets are fall-off-the-fork flaky. While red pesto and sun-dried tomatoes have the rich, garlicky, Italian-style flavours covered, we like to stir in reduced-fat cream cheese towards the end to make everything luxuriously creamy, too.
