You don't need meat to make a warm and cosy pot of curry. Combining cheap and cheerful tinned ingredients with colourful fresh veggies and spice-rack staples, this fragrant dish will have everyone at the table wiping their bowl clean – vegan or not! A pour of light coconut milk thickens the sauce and cools things down, while buttery beans ramp up the indulgence. The trick is to use spuds that hold their shape nicely while slow-cooking, so every forkful has a satisfying bite.
