Slow Cooker Peri-Peri Chicken Stew
Add a sticky note to this page if you love Portuguese-style chicken! This chicken stew recipe puts a slow-cooked twist on peri-peri flavours. If you've never tried it, peri-peri is a blend of chillies, lemon, pepper, garlic and herbs – you can pick it up from the shops in varying spice levels, from mild to super spicy. Add the seasoning to your liking, then tenderize the chicken chunks on low in our tomatoey, lemony, garlicky sauce. It all stirs together with vibrant peppers, spinach and sweetcorn to create the most colourful meal you'll eat all week!
Hints & Tips
Below we added some of our communities most common hints and tips. We hope you find them useful.
Peri-peri (or piri-piri) seasoning can vary depending on brand, but often come with a spice rating, mild, medium or hot. Pick one to suit your tastes. If you aren't too sure about how much spice you can handle, reduce the amount of peri-peri seasoning in the recipe. You can always add more!
Prepare all the ingredients without adding the stock. Freeze, defrost, then stir through the hot stock and continue with the recipe method.
