Slow Cooker Lemon and Rice Soup
Feeling under the weather? Don't worry – cooking from scratch doesn't have to mean a fuss! This low-effort, big-flavour broth is as comforting as a warm hug, yet it's light and fresh with a lovely lemony tang. As the veggies, thyme and bay leaves gently slow-cook, they'll release their herby earthiness. Stirring in basmati and wild rice towards the end makes every bowl more filling, and helps to soak up all that nutritious natural goodness. Serve with a squeeze of lemon, a good sprinkling of salt and pepper and a crusty bread roll.
