Slow Cooker Harissa, Chickpea and Potato Stew
Inspired by our love for Moroccan tagines, this sweet and spicy stew is packed with bold, vibrant flavours. A few tablespoons of harissa paste and a dash of cumin bring the perfect hint of heat, while apricots and butternut squash add a moreish touch of natural sweetness. Our favourite thing about this wholesome stew is that it's ready when you are. You'll throw all of the ingredients in the pot together to cook them on high, or leave them to bubble away on low – whichever suits your schedule best!
