Slow Cooker Blind Scouse with Quick Pickled Cabbage
Our nan always had a steaming pan of scouse on the go at the weekend – it would simmer for hours, ready to warm up anyone who called in at a moment's notice. This 'dump and go' slow-cooker meal puts a veggie-friendly twist on her classic recipe. To make every bowlful just as satisfying without the meat, we've stirred in plenty of nutritious veggies, spuds and filling pearl barley. True to the all-day version, you can leave this one to bubble for 8-10 hours. And the quick pickled red cabbage is an absolute must (it'll also pair nicely with our Beef and Root Vegetable Stew with Cheddar Dumplings on page 182).
