Bored of your usual chicken breast? We’ve added an Italian-American twist! This Pizza Chicken is made by baking juicy chicken breast in a marinara sauce — with tasty tropical toppings — it has all the deliciousness of a Hawaiian slice, without the crust. Look familiar? It’s actually the cover star from our first-ever magazine! If you’d rather cook from a book, order it online and get your hands on 30 additional recipes too!
One of the main reasons we love this dish is because it’s so simple to make. The rich and garlicky tomato sauce that forms the base can be mixed in less than five minutes. Then all you need to do is pour the sauce over your chicken, and add the finishing layer of cheddar, mozzarella, cherry tomatoes, ham, and pineapple. Or if you’re someone who thinks pineapple doesn’t belong on pizza (we know it can be quite controversial!), feel free to choose your own toppings!
You can add anything you like — black olives, pepperoni, mushrooms, green peppers. If you’re calorie counting and getting creative with your toppings, just remember to account for any additions or differences.
What diets is this Pizza Chicken suitable for?
This Pizza Chicken can easily be made gluten-free — simply switch the ham out for a gluten-free version. It can also be made dairy-free if you swap the cheddar and mozzarella for dairy-free options.
As always — be sure to take extra care when cooking for people with allergies. Use separate utensils, cookware, and preparation surfaces.
Do you need any special ingredients to make Pizza Chicken?
This is a store cupboard-friendly recipe, so it’s possible that you might even have a few of the ingredients at home already. If not, all of the ingredients can be found on your local supermarket’s shelves.

Step 1
Preheat the oven to 190ºC fan.
Step 2
Pour the passata into your ovenproof dish. Sprinkle over the garlic granules, onion granules, and Italian herbs – then season with salt and freshly ground black pepper. Give it a good stir.
Step 3
Arrange the chicken breasts on top of the tomato sauce mixture. Sprinkle the cheddar cheese over the chicken in an even layer, then add the cherry tomato halves – cut side up.
Step 4
Scatter over the ham, pineapple, and mozzarella, then place in the oven for 25 – 30 minutes – or until the chicken is cooked through, shows no sign of pinkness, and the juices run clear. When your dish is ready, the cheese should be melted and lightly golden. Scatter with basil leaves, and serve.
