Mango and Coconut Bread Pudding

You don’t want to miss this tropical twist on classic bread and butter pudding. It uses sweet, juicy mango and creamy coconut, infusing the bread slices with exotic flavours, and is topped off with a moreish mango sauce. To cut calories, we blitz together eggs and a plant-based coconut drink with granulated sweetener to make a custard, then let that soak through the pudding, then it’s ready to bake until gorgeous, golden and spongy. We love enjoying leftovers cold the next morning for breakfast!
