We’re big fans of anything that doesn’t require loads of washing up after dinner, and this Lazy One Pot Lasagne is super quick, simple and – you guessed it! – only calls for one pan to make. Even better, because we’re swapped out some of the more calorific ingredients you’ll find in your typical lasagne for more diet-friendly alternatives like fat-free natural yoghurt, this dish still slots into your healthy lifestyle without sacrificing any of those rich flavours you know and love! 

We’ve packed it full of veg to help you get your five a day but if there’s any veg that you’re not a massive fan of, feel free to swap it out for something else. Or just leave it out entirely if you’d prefer! Whichever veggies you choose to include, make sure that you cut them all roughly to the same size –  this helps them to cook evenly, so you won’t be left with chunks of surprise raw vegetables throughout.

Add the lasagne sheets to an ovenproof dish or baking tray and pour over boiling water so that they’re just covered. Leave the lasagne sheets to soak while you prepare the rest of the recipe.

Spray a frying pan with low calorie cooking spray, add the onion and fry for 2 minutes until just starting to soften.

Add the beef mince to the pan and stir until browned on all sides.

When the beef mince is browned, add the peppers, courgette, garlic and mushrooms and cook for a further 3 minutes until the vegetables are starting to soften.

Add the chopped tomatoes, tomato puree and Henderson’s relish, and stir.

Crumble the beef stock cube directly into the pan along with the dried basil and oregano, stir and season to taste. Allow to bubble for 3-4 minutes.

Whilst the beef is bubbling, add the fat free yoghurt and beaten eggs to a mixing bowl and whisk together. Season with salt and pepper and leave to one side.

Pour half of the beef mixture into a clean mixing bowl and then level out the remaining mixture into an even layer in the bottom of the pan.

Remove the lasagne sheets from the water and slice into 4 sections. Layer the sections of the sheets on top of the beef mixture in the pan and pour half of the yoghurt and egg mixture on top.

Repeat in layers with the rest of the beef mixture and lasagne sheets and top with the remainder of the yoghurt and egg mix.

Allow the pan to bubble slowly for 10 minutes until the lasagne and white sauce are heated through and an inserted knife goes through the lasagne easily.

Preheat your grill and sprinkle the top of the lasagne with the grated cheese. Pop the pan under the grill until the cheese is bubbly and golden in colour. Top with the basil leaves and serve with your choice of accompaniment.

Ingredients

  • 6 lasagne sheets
  • low-calorie cooking spray
  • 1 onion, peeled and finely diced
  • 500 g 5% fat beef mince
  • 2 mixed peppers, deseeded and finely diced
  • 1 courgette, finely diced
  • 2 garlic cloves, peeled and crushed
  • 100 g mushrooms, diced
  • 400 g tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tsp Henderson's relish
  • 1 beef stock cube
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper, to taste
  • 200 g fat-free natural yoghurt
  • 2 eggs, beaten
  • 100 g cheddar cheese finely grated
  • fresh basil leaves (optional)

  10. Repeat in layers with the rest of the beef mixture and lasagne sheets, then top with the remainder of your yoghurt and egg mix. Then lower the heat and simmer gently for 5-8 minutes.
  11. Preheat your grill, then sprinkle the top of the lasagne with the grated cheese. Pop the pan under the grill for 5 minutes – until the cheese is bubbly and golden in colour. Top with the basil leaves, and serve with your choice of accompaniment.
