Preheat the oven to 170°C.

In a small bowl, add the rosemary, oregano, thyme, garlic, mustard, salt, pepper and lemon zest. Mix well.

Remove any string from the lamb and make diagonal cuts into the surface of the joint.

Rub the rosemary mix all over the lamb joint, getting plenty of the rub into the diagonal cuts.

Spray a large casserole dish with low-calorie cooking spray and add the potato, carrot, onion, pepper, tomatoes and garlic and season well.

Place the lamb on-top of the vegetables.

Pour in the lemon juice and water. Cover with a lid and cook for 3 hours. Check halfway through and add a little extra water if the vegetables look like they are drying out.

Turn up the oven to 200°C.

Remove the lamb from the oven and shred with two forks.

Return the dish to the oven for 20 minutes to crisp up the lamb around the edges. Serve with an accompaniment of your choice.

How do you know when Kleftiko Lamb is cooked?

You’ll know Kleftiko Lamb is ready when the juices run clear and the meat is crisp – but not burnt! 

This will take around 3 hours at 170°C, and then an extra 20 minutes with the oven turned up to 200°C, to get that moreish texture.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Kleftiko Lamb in the fridge?

Once you’ve served this recipe, you’ll ideally need to eat it within 4 hours.

You can store any leftovers of this Kleftiko Lamb in the fridge for around 3 days. Make sure that you allow them to cool before putting them in a container with a lid and chilling in the refrigerator. 

Can I freeze Kleftiko Lamb?

Yes, you can! This recipe can be frozen, but please remember to do the following;

From chilled: Place in a microwave-proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes. Stir, then cook for a further 5-7 minutes until piping hot.

Ingredients

  • 2 tsp dried rosemary
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp garlic granules
  • ½ tsp mustard powder
  • salt and freshly ground black pepper to taste
  • 1 lemon juice and zest
  • low-calorie cooking spray
  • 800 g rolled lamb breast joint
  • 1 large potato sliced into wedges (no need to peel)
  • 1 medium carrot peeled and cut into chunky batons
  • 1 red onion peeled and cut into wedges
  • 1 red pepper deseeded and cut into chunky strips
  • 2 tomatoes quartered
  • 4 garlic cloves peeled and crushed
  • 50 ml cold water
