The scrunched-up sheets of filo pastry bake until golden and crisp, for a lovely crunch that you can’t resist digging into. We’ve added cubes of potato into the creamy ham and leek filling, to make sure every portion is really satisfying, without the need to use another pan.

This pie is best served straight from the oven while the pastry is still crisp. 125g of filo is around half a pack. Buy it chilled, then wrap the leftover filo sheets thoroughly and freeze for future use.
