We love a good fusion recipe! This Carbonara Quiche combines the creamy, cheesiness of an Italian-style carbonara with light, fluffy French-inspired quiche that’s utterly delicious served hot or cold.

It goes without saying that pasta wouldn’t quite work here, so we’ve swapped out the spaghetti for a tasty filling of leeks, smoky bacon and two types of cheese. This is a Pinch of Nom quiche, so of course, we’ve cut the calories by going crustless – not that you’ll miss it!

Lean bacon medallions add that classic savoury flavour, balanced by a creamy mix of light double cream alternative, quark and reduced-fat Cheddar. A final sprinkle of Parmesan and a good crack of black pepper brings everything together!

This Carbonara Quiche recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Spray a frying pan with low-calorie cooking spray and set on a low-medium heat. Cook the bacon, leeks and garlic for 4-5 minutes until the leeks are softening and bacon browned. Slice the bacon and leave to one side with the leeks to cool.

Preheat the oven to 170°C.

Break the eggs into a large bowl and whisk. Add the double cream alternative, quark, Dijon mustard and garlic granules. Continue to whisk until fully combined. Season well with salt and pepper.

Stir through the cheddar cheese, bacon and leeks. Pour the egg mixture into a 24cm flan dish. Sprinkle over the Parmesan cheese.

Place the dish onto a baking tray and pop into the oven for 25-30 minutes, until the quiche is golden brown. The quiche should be set around the edge with a very slight wobble in the centre. The heat from the quiche will finish cooking the centre, so that it has a light creamy quiche texture when slicing.

How do you know when Carbonara Quiche is cooked?

You should cook this Carbonara Quiche until the quiche looks golden brown. It should be set around the edge with a very slight wobble in the centre. This will take around 25-30 minutes.

From chilled: Place in a microwave proof container with loose fitting lid and heat for around 3 minutes until piping hot.

  • low-calorie cooking spray

  • 200 ml light double cream alternative
  • 100 g quark
  • ½ tsp Dijon mustard
  • ½ tsp garlic granules
  • 100 g reduced-fat Cheddar cheese finely grated
  • 15 g Parmesan cheese finely grated
  • salt and pepper to taste

Hi. Is it smoked or unsmoked bacon? Was confused as smoky bacon was mentioned but in ingredients it says unsmoked bacon.
