UPDATE: It has been a week now and as someone who cooks only fresh ingredients for myself and my wife, I can hand on heart tell you, you will NOT be disappointed with these blades.
I chopped some mint today to add to my potatoe salad mix. I add equal parts of cottage cheese, mayonnaise, parsley and cream cheese. It sliced through the mint as if it were butter. Chopping parsley with the largest blade was superb. The larger blade rocks perfectly.

I use a sharpening stone to put a razor like edge on but I imagine most shrapening tools would be fine. I give these knives six stars.

Excellent degree of sharpness straight from the box. YES, the sharpness can be bettered, but only of you know your stuff. I very muck ike the feel of the nadles too.
