UPDATE: It has been a week now and as someone who cooks only fresh ingredients for myself and my wife, I can hand on heart tell you, you will NOT be disappointed with these blades.
I chopped some mint today to add to my potatoe salad mix. I add equal parts of cottage cheese, mayonnaise, parsley and cream cheese. It sliced through the mint as if it were butter. Chopping parsley with the largest blade was superb. The larger blade rocks perfectly.

I use a sharpening stone to put a razor like edge on but I imagine most shrapening tools would be fine. I give these knives six stars.

Excellent degree of sharpness straight from the box. YES, the sharpness can be bettered, but only of you know your stuff. I very muck ike the feel of the nadles too.

These knives are sharp. I cut myself using the smallest one and the cut was deep. I bought the set in aqua blue and although they are lovely to look at, they rust easily. After washing the knife after cutting myself the tip has rusted, even though the time it was in water was only a few minutes while I tended my wound. On another occasion the largest knife developed a little rust after I washed it between use of chopping vegetables and meat. On the whole I wouldn't buy these knives again and I am already looking elsewhere for a replacement. Some advice I received was to not buy a set but buy the best knife you can afford and build your set up that way. That's what I'm going to do.
