Pesto Courgetti with Tomatoes & Chilli Recipe

Fill up (without the carbs!) on the super-quick courgetti recipe. Simply cook your freshly spiralised courgettes for around 20 seconds, then toss with Sacla’ Vegan Basil Pesto, cherry tomatoes and a punch of chilli flake. Gorgeous.

  • Use a spiraliser & courgettes to create your "courgetti"
  • Boil the courgetti for 20 seconds, drain and stir-in the Pesto

Description It will bring a burst of Italian flavour to any dish, and it’s especially good stirred into vegetables before roasting. To release the authentic flavours, we pound the leaves together with pine nuts, cheese, cashew nuts and extra virgin olive oil. All sourced organically, of course. The Asian flavour notes will brighten up a simple bowl of noodles as an alternative to pasta, and it’s particularly good with chicken. In the kitchen, we slowly roast them with sweet yellow peppers, and add fresh basil, cheese and garlic. The sweet and satisfying taste of our Sun-Dried Tomato Pesto is perfect paired with chicken kievs, fusilli and chorizo, or even a comforting cottage pie. It’s perfect for special occasions and treats, and for transforming fresh pasta, like traditional agnolotti or ravioli in to a very special dish.

    I've stopped eating cheese as part of protocol with my kinesiologist and so far I've not found a good vegan alternative to cheese but I was drooling over the idea of some pesto over homemade spelt kefir flatbread.
    It's not the same consistency or taste as the one with cheese in it but it's ok. I sprinkled yeast flakes over the top and it worked for me. I'd buy it again.

    I am pleased to have found a vegetarian pesto and one that is nut free too! My son has a very serious nut allergy so it's not always easy finding nut free pesto.     I discovered chilli. Or rather my ability to eat Chilli again. It's not as hot as Harissa. Very mild and fruit with a kick. I was never a ketchup person however, this has become my Ketchup, Harissa condiment. It is tomatoey enough, but not a tomato sauce. It has a good consistency to be used as a dip, or as a dressing. I sometimes thin it down with Yogurt or Oatgurt. Since, I discovered this product, I no longer buy the herb/ Basil pesto. I make it at home when possible. And it's vegan.
    This arrived in time in good condition and good date stamp on in.
