A bit of history...

The pie plate was Pyrex's first product and the one that gave its name to the brand. Corning had initially thought of "Py-right", but finally opted for Pyrex, to work with Nonex, the first borosilicate glass formula patented by the company. This item very quickly became the ambassador of Pyrex cooking glass, the symbol of its cleanliness and clarity.

Cinnamon and cardamom flan

  • Crush the cardamom pods gently and remove the dark seeds. Crush the seeds to a fine powder and use.
  • Add all the ingredients together and mix well, making sure the egg is beaten up.
  • Pour into a Pyrex flan dish and bake at 150C for 40mins.
  • The flan is done with the centre reaches 74C.
  • Chill the flan thoroughly.
  • Just before serving sprinkle an even layer of demerara sugar over the flan (approx 40-50g) Using a strong blowtorch, caramelise the sugar to give a crispy crackling surface without cooking the flan.
  • Sprinkle over chopped pistachios to finish.
